Road Trips with Kids

Fig Jam
Fig Jam recipe:Place ripe figs in bowl and sprinkle two tablespoons of sugar on them, cover and keep in refrigerator over night. On low heat pour figs into pot with 1/2 cup of water, cinnamon and juice of one lemon and simmer for 30 minutes make sure to stir. Use an immersion blender and purée figs.Simmer for another 15 minutes stirring periodically. Place in jars, let cool to room temperature and refrigerate. Pineapple Salsa
Ingredients: 3 Beef Steak Tomatoes 1/2 Pineapple 1 pepper salt, parsley, sage, basil, thyme, garlic Rough chop 2 tomatoes, 1/4 pineapple and pepper. Place in skillet with a splash of olive oil. Add salt, garlic and herbs and simmer for 20 minutes. Use an immersion blender and take care of any chunks of pineapple that didn’t break down in the simmer process.
