Pineapple Salsa

Ingredients:

3 Beef Steak Tomatoes 1/2 Pineapple 1 pepper salt, parsley, sage, basil, thyme, garlic

Rough chop 2 tomatoes, 1/4 pineapple and pepper. Place in skillet with a splash of olive oil. Add salt, garlic and herbs and simmer for 20 minutes.

Use an immersion blender and take care of any chunks of pineapple that didn’t break down in the simmer process. Continue to simmer but stir frequently.

Chop up third tomato and 1/4 of a pineapple into small square bites. Toss into skillet and turn off the burner. Stir very well and transfer into mason jars. Seal the jars tight and let them cool down to room temperature. Keep in the refrigerator after that. And enjoy!
