Halal and Vegan Marshmallows!!!!
Most of you have at least tried Halal and vegan option Marshmallows, and know that the store bought kind is pretty nasty. Well at least in my opinion. Luckily, the home made versions are really good. Fresh is best!!! Depending on your needs and texture preference, both beef gelatin and agar agar are good substitutes for other gelatin options. It’s a two day process so sit tight!!!

This recipe is the Halal version so I will be using the beef gelatin.

You are going to start by mixing 1.5 tablespoons of the gelatin, with a 1/2 cup of ice cold water and 1 tablespoon of vanilla. Let that sit while you get the simple syrup together.

2 cups of sugar, 2/3 cup corn syrup, and 1/4 cup of water. You want to combine these over low heat. Continue stirring until all the sugar is dissolved. Once all the sugar is dissolved, stop stirring and stick your candy thermometer in there. Let the syrup come to a hard boil. At 240° take your syrup off the stove. And slowly add the syrup to the gelatin mix, in your mixer using the whisk attachment. Continue to whisk together until you get a meringue like texture. The marshmallow mix will start to peel off the sides of the bowl.

You should have your pan ready to go beforehand, lined with plastic siran wrap, bottom and sides. And pour your marshmallow mixture into the lined pan. You can also put the mixture into a piping bag and pipe the mixture into shapes. But you really have to move quick that way.

For this batch, I made them thinner so I could cut out these cute teddy bear shaped marshmallows. Be sure to cover the whole thing with siran wrap. And let the Marshmallow set overnight.

1/2 cup of powdered sugar and 2 tablespoons of corn starch mixed together gives you Marshmallow dust. Use it to dust the entire workspace and invert your marshmallow on to your workspace. You can cut them into squares, or shapes, whatever you do be sure to dust your knife or cutters to prevent a sticky situation. Tip: use pastry cutters versus cookie cutters, they are deeper and will give you a better cut, tall marshmallow. Once you have all the shapes cut out make sure to coat each piece with Marshmallow dust and shake off any excess dust.

And you have fresh Halal Marshmallows. Make sure to store them in an airtight container. Let me know what shapes you make.
